When does the aging process start?

I know we all like to age our cigars. We say,"put them away for a year", or "they're good to go ROTT", or "give them a few months rest", etc.

So when does the aging process really begin? Does it start as soon as the cigars are rolled and put in boxes at the factory?

Does it start even before the cigar is rolled, when the leaves are picked and hung?

Or, does the "aging" start when we buy the cigars?

I've purchased boxes of cigars that have dates on the bottom. I assume these are packaging dates. If I receive a box of cigars today, and the date on the bottom of the box is from 2005, is that when the aging starts?

I'm just kind of curious what you guys think.
