Vegan/Vegetarian grilling ideas....

The back story behind this is , late last summer I went the plant based whole foods route on eating... I didn't eat any meat of any kind for 4 months , well that is a little bit of a lie , I snuck a few cheeseburgers in there....

after about a month , I felt better , looked better , slept better , had more energy and had to cut my BP meds in half...

my goal currently is to stay about 80% whole foods etc... which is pretty easy when it isn't grilling weather , I try to eat great during the week and anything goes on Saturday...

But , now that it is nice out its hard not to fire up the grill...

So , I am looking for any ideas that you may have about veggies on the grill etc...

I have tried all the normal stuff , eggplant for example , just cant find a way to grill it that I like ... I love grilled romaine , but that's basically just a salad...

there is a a Zucchini nachos recipe that we like , but , I will get bored with that in a hurry...

So , any ideas out there...

Well i made sirloin burgers yesterday (normally i use ground brisket but was out) and am having 2" thick ribeyes today

I just try to stick to the other stuff during the week...

I hate eggplant but love it grilled. The secret is to slice it, place it on paper towels, and heavily salt it with rock salt. It pulls out all of the bitterness. After an hour or so (the longer the better), rinse off the salt, sprinkle with olive oil and salt and pepper, and grill.
I also always hated brussels until I grilled them.
We grill all of the regulars: peppers, corn, carrots, squash, potatoes (poke thoroughly with a fork, cover in either olive oil, butter, bacon grease, or duck fat), then generously cover with salt and pepper and smoke them on the grill).
I have even grilled endive, boc choi, and other leafy greens.

Does not compute. This thread cannot exist. Grilling and vegetables are anathema. Oxymoron. computational failure.

Yeah i expected some backlash lol...

One other thing , i didnt realize how bad i actually felt until , i felt good everyday .... but , i strayed away from that diet , gained 20 pounds back , feel like crap compared to the way i felt then , so trying to get back there, time will tell...

I'm doing Atkins style right now. Lost a few pounds. Did some cigar events yesterday and found nothing to eat without bread... Sigh
