The official long drink of summer 2008
Two years ago I drowned myself in Pimm's Cups. Last year it was The Mojito. This summer
<drum roll> The Dark 'n' Stormy Fill a tall glass with ice Fill half way with dark rum (Goslings, Zaya, Cana 7, or the like) Top with ginger beer (not Schwepp's Ginger Ale) Squeeze in a lime wedge and discard, squeeze in another lime wedge and toss in. Wash, rinse, repeat.

One of my favs. Though I do use regular ginger ale when I don't feel like breathing fire.

Here'a another variation to try...
Get your blender/food processor ready. Dump in some tinned pineapple (and a bit of the juice if you so wish). Add some fresh ginger (peeled). Add sugar or (for an interesting variation) maple syrup to taste - you'll need the sweetness here to counterbalance the heat of the ginger. Top up with your favourite not-too-expensive dark rum. Blend. Have an empty bottle at hand. Pour the blended contents into the empty bottle until it's about one-third full. Then fill the bottle up with more of the rum and place it in the fridge. To serve: Take some relatively large cocktail glasses or tumblers and drop a couple of ice cubes into each of them (I like to mix freshly chopped mint leaves into the ice cubes before I freeze them). Pour a couple of ounces of the rum mixture into each glass. Top up with cold ginger ale and stir gently. Garnish each glass with a fresh whole mint leaf and (optional) a green Maraschino cherry. Guaranteed to refresh!

Dark and Stormy is a once in awhile drink for me...no way I could do them all summer long.

I'm going to have to save these recipes for future referance.
Going to be hard to break the Mojito habit. The mint is already a foot high!

Karl turned me onto this while we were in NOLA a couple of weekends ago. Easy to drink and not too sweet!
