I would :
1. Take it down to studs. 2. Cover it with particle board. (It is very stable) 3. Seal well with a water based sealer. 4. Line with Spanish Cedar boards.

You shouldn't post here if you don't want 9/10s of the advice you get to be way, way over the top excessive!!!
