Luau Suggestions

Will be throwing a luau in early January for my inlaws 55th wedding anniversary. I'm gonna smoke a pork butt or two Kulua style. Complete with Kiawe wood, banana leaves and Hawaiian sea salt. For drinks mai tais for sure. Buy will absolutely not be making Poi. Noooo, it sucks.

And suggestions with side dishes and appetizers? I know I can google and get more info than I ever wanted but looking for recipes you know to be worthy. Anyone ever tried macadamia nut rice? Thanks

rice with nuts in it is good, you get the crunch and the softness (kind of a pilaf thing, I am more used to almonds for that, but macadamians would work I think)... might want to use jasmine rice for that. I would think grilled pineapples would work too, they caramelize really well over the flame. I had Hawaiian baked beans once, basically add pineapple to the onion, ketchup, vinegar you cook the great white beans in

Never been to a real one, but pork and pineapple are musts. Be careful with the pineapple, as it will start to break down pork from the moment it touches it. Don't marinate it long in pineapple juice or you are going to have mushy meat. Better to put the pineapple directly on the pork in the pit. You can always get pineapple flavor in your serving sauce.

BigO, Not planning on using pineapple in the smoking of the pork nor in a glaze. I will be using banana leaves as the kulua pork calls for, which is odd to me. I've been to Hawaii a number of times and never once seen a banana tree.

Yes, I’ve never made kulua style pork before so looking forward to seeing how it turns out. When I’ve had it in Hawaii it’s been hit or miss honestly.

Never been to Hawaii myself. I hope it turns out as you like. I'm open to offering suggestions if you want them, Dan. This just isn't in my regular wheelhouse.
