I'm biased here with my preference of music. I can think of several metal covers of non metal songs that sound better to me, as well as newer covers of older metal songs that enjoy better production, and a heavier sound than the origional. With that in mind:
Format: song title - covering artist (origional artist) Oops... I Did it Again - Children of Bodom (Brittany Spears) Silent Scream - Children of Bodom (Slayer) Surfin' Bird - Sodom (The Trashmen) Battery - Ensiferum (Metallica) No Remorse - Cannibal Corpse (Metallica) Gangsters Paradise - Artas (Coolio featuring L.V.) Stairway to Heaven - Zakk Wylde (Led Zeppelin) |

I kind of like STP's version of "Dancing Days".

Crazy-Ray LaMontagne
Was originally done by Gnarles Barkley. If you hated the song, give it another chance. Ray is incredibly soulful |

How bout:
Jimmy Buffett - Southern Cross over C,S,&N & City of New Orleans over Steve Goodman's original; Scarlet Begonias over the GD Elivis - Blue Suede Shoes over C. Perkins original Hendrix or U2 - All Along the Watchtower over Dylan's original Pretty much any Sinatra over whoever first performed the songs. Thats all I can think of for now.

I might be showing my age (or lack thereof), but I really dig the Foo Fighters' cover of Band On The Run by Wings. It really suits their style. Don't get me wrong, love the original, but The Foos give it some extra punch.
Oh, and UB40's version of Red Red Wine by Neil Diamond. Waaay better. |

Ann and Nancy Wilson do some great Zeppelin covers, particularly Battle of Evermore.
Sting's cover of Little Wing. Most of George Thorogood's covers of Bo Diddley and others. Sammy Hagar's cover of Piece of my Heart (Company of Thieves did a great job of that song too, on www.livefromdarylshouse.com and their cover of Time of the Season is awesome).

I've always liked Sammy (I Can't Drive 55) Hagar, even in his Van Hagar days. I'll need to find that.

Chris Whitley & Jeff Lang's version of Dylan's "Changing of the Guard", is a beautiful song. Dylan's version, from Street Legal, is a mess. IMHO, of course!
As for All Along The Watchtower, Dave Mason also did a killer version. And of course any cover my band plays is better than the original!
