Skate Wing
Sunday dinner was skate wing
soak skate wings in salt pepper and milk to cover, I soaked for about 20 minutes remove one wing at a time and allow milk to run off then dredge in flour lightly add to pan with oil just shy of smoking, cook 3 minutes per side or until golden brown. Cook in batches if necessary, hold on warm plate. wipe out pan add 2-3 tablespoons of butter, some chopped garlic and onion or shallot and cook until veg softens and butter is light brown. Add lemon juice. (and/or capers) Plate fish, sauce, serve. This is a very tasty fish, I surprised myself with it.

Said to be sold as faux scallops by dishonest fish mongers. If sold straight up as skate wings, they're quite tasty.

this was skate wing displayed and sold as such. the fish shop has had it lately.

not really. no more work than chicken picatta or the like. for 6-7 minutes to cook the fish and maybe 5-7 to make the sauce, it is really simple.

I was out for dinner last night at a Greek seafood place. They had Skate on the menu so instead of the Arctic Char I normally have I gave it a try. It was outstanding. (could have done without the capers, but I say that every time I eat there. One day I'll remember to have them left in the kitchen.)
If you've never had it I'd highly recommend it. Not the capers.

I miss affordable fresh seafood. Besides Whole Wallet, which can only be described as reasonable by folks in the 30% tax bracket, only decently priced seafood is at the international markets.

well whole foods is going to drop some prices, but I doubt fresh seafood is in that collection. seafood is expensive. H Mart has the best prices around here.
