A lot of people think aging in charred barrels is some form of filtering. It is not.
This is correct. New white oak barrels are charred in order caramelize the sugars in the wood and forms a 'red layer' under the char. As the bourbon ages it expands and contracts in and out of the red layer bringing with it candy flavors and color. Bits of char flake off and float around in the bourbon. What Black Plague is tasting in his Knob Creek is the char. This is a good thing. The sweetness of the corn and the caramelized sugars of the red layer also serve to sweeten the char, and is a signature chacteristic of all well aged bourbons.

The only bourbons that are charcoal filtered today are Evan Williams and Ezra Brooks. They are filtered with activated charcoal and not the costly white sugar maple charcoal of the Lincoln County process of Tenneesse.

Most bourbons today are chill filtered. Chill filltering when done correctly removes less flavor from the bourbon and imparts no flavor of its own as charcoal filtering does.
