I am a complusive do-it yourselfer, let me give you 2c and you can make your own decisions, if you are going to build a pipe (and I am sure that I will have to do this too) drop some change and buy the best possible block of burl you can find, just suck it up and pay for it.
My logic is this; I have bought a bunch of things that I though "Eh, I will give this a try" then cheaped out on the parts, only to find out that it is harder with a lesser quality wood (more voids, imperfections) and if I dont' feel like I paid full price then I don't necesarily worry about spending the extra time or effort, it is easy to throw away, I get the "F-it" attitude if it starts going wrong. Garbage in-garbage out.. You are going to spend the time one way or another, might as well have something excellent when you finish.
