Louisiana Chef Question

One of my all time favorite chefs is Donald Link. My only connection with him is his cookbooks. I love the books and have tried a number of his dishes and found them delicious. So, to you coonass foodies is he the real deal or a flash in the pan?

I'm not terribly familiar, but I do know that he assumed ownership of the NOLA institution La Boulangerie. The comments I read after Katrina weren't very positive, but New Orleans and hate changes in their favorite restaurants. His big moves were post-Katrina, so Tommy will probably have more up to date information.

I can't afford his restaurants, but I've heard good things about Cochon and Cochon Butcher. His one link of boudin, last I looked, was around $12.00
