I like it between 1st and 2nd crack. Right where the beans have just smoothed over. But it still seems to roast uneven. I now tend to agree with grtrx, that the uneven roast is just inherent in this particular coffee.
Subsequent roasts (2) of the local roasters beans have been more even, but still reminiscent of the way an Ethiopian or Yemen roasts up. The flavor profile, to me, is that of a typical Central, reminiscent of a good Costa Rican, but with a little more complexity.
