Higher temperature.
The higher temperature fermentation brings out the sweetness. Some have been accused of "cooking" their maduro by placing stoves or other heat sources in where they accomplish the fermentation. Many believe this is less than legitimate, and not "true" maduro. Some have been accused of coloring their maduro by adding some kind of coloring agent to the leaves at some point in the process. Many have, although I have not, smoked maduro cigars, especially back about 15 years ago, or so, and come away with stained fingers and lips.
