last night did not go well.... skatewing was soft and and never go crispy.... heat too low on stove

asparagus overcooked. No idea why I went with the recipe I use for my parents pan steam then oven roast.... ruined it to mush (my parents believe anything green should be cooked until mush). Potato gratin... too much milk, too deep of pan, cheese that didn't want to melt... tasted ok, used flour to thicken it up

Double rib pork chop tonight with chard and the leftover gratin

last night's wine was a 20111 Puiginy Montracet which was just amazing

Well, you managed to salvage something of the meal. Oftentimes, a great wine can make your guests forget about a botched effort.

I made Cajun white beans and rice out of a ham bone. Ribs right now are sinfully cheap right now (thank you Trump for pissing China and Russia off enough to get them to boycott American pork without an outright trade or shooting war...can you piss off the salmon and cod producers off next? We could use some reasonable seafood here.). Two racks of spares this afternoon at $2 a lb and 5 slabs of baby backs at $1.74/lb cooling their heels in the fridge for the next couple of weeks. Paleo diet let's me eat all the dry ribs I want. Happy days.
