Skate Wing

Sunday dinner was skate wing

soak skate wings in salt pepper and milk to cover, I soaked for about 20 minutes

remove one wing at a time and allow milk to run off then dredge in flour lightly

add to pan with oil just shy of smoking, cook 3 minutes per side or until golden brown. Cook in batches if necessary, hold on warm plate.

wipe out pan

add 2-3 tablespoons of butter, some chopped garlic and onion or shallot and cook until veg softens and butter is light brown. Add lemon juice. (and/or capers)

Plate fish, sauce, serve.
