Culinary Adventure
Doing a culinary adventure this weekend with the family.

Wow. Carb city. The family recipe is pretty standard, but the trick is to use crumbled saltine crackers instead of bread crumbs.

my CC recipe:
2#-3# Lump Crab Meat 3/4 pack- 1 pack of Club Crackers crumbled have some chunks not powdered crumbs 1 C Mayonnaise*...heavy cup 2T Dijon Mustard 2 T Tabasco Sauce 2T Lemon Juice 1T Old Bay Seasoning 2 Eggs 2 T Chives Chopped 2 tsp White Pepper Combine ALL WET INGREDIENTS together in 1 bowl. Combine Crab and Crackers in another bowl. Add the WET into the DRY and mix LIGHTLY. Try not to "overwork" the Crabmeat. Form into small balls and then press into patty. Your choice of cooking: pan sauté, bake @ 350 for 15 min- flip then finish for another 5-8 min or slightly freeze and deep fry. Last edited by Coach; 05-26-2017 at 01:04 PM. |
