The problem buying online is that you often get odd sized pieces. The less pieces you use to line, the better it looks IMO. Look for a specialty hardwoods store close enough for you to drive to it. Tight grain is the best for cutting and routing. After much experimenting, I like 3/8" for liners and trays.
