Roasting and it's affects on coffee beans

I recently moved up to a BBQ roaster, which has allowed me to play with roasts more than I did with my Behmore. I've come to realize that temp/time and how they are applied can have a tremendous affect on what comes out of that roaster and finally into your cup. For example, if you elongate the time between cracks, you'll get something totally different than if you run them closer together. Also, if you finish your coffee at say 500 degrees, it tastes different than if you finish it 20 degrees lower. I don't like to finish my coffee over 500 degrees, but sometimes it just gets away from you and shit happens.
Now my wife thinks I'm completely insane, because "it's just coffee", but I am absolutely sure that my palate can distinguish the subtle flavors that come out of different roasts. Then you grind and make an espresso, which tastes different than French Press, which tastes different than Vacuum pot coffee. I'm on the crazy train man!!!

You are scratching the surface of what professional roasters do all the time. Deciding how to extract the best from a particular bean but the profile of heat and time. As home roasters we don't even come close to the level of control and knowledge of some professional roasters but still enjoy better coffee than what's available commercially in most cases.

My friend in Houston has a commercial roaster in his garage and he has a lot more control than I do on a BBQ grill. I moved up to a grill, because I wanted to do more than just push a few buttons and wait the alloted time for my beans to be ready. The one major thing that BBQ roasting lacks is pinpoint temperature control. I have a temperature probe mounted inside the grill, but that doesn't give me the temp inside the roasting basket. I've been very happy with what my setup has put out though.

That is where it becomes an art. Think about the guy who buys dried tobacco from the grower, and has to decide exactly how to ferment, blend, and do all the other magic necessary for great cigars.

I really feel that roasting coffee may be more complex than making beer or wine. Like you said, just a few degrees, a few extra BTUs of heat will create huge changes.

changing yeast, a few extra days here or there, dry hopping, so forth, all things make a beer different. I don't think that subtle changes in process will make such a difference, because roasting something into charcoal and extracting and destroying the chemical components is NOT a delicate process.
