Pork loin preparation question

Is it better to cook it in a slow cooker or oven?

If you're talking about a boneless loin roast, I do those in the oven. Dust with salt and pepper. Preheat oven to 450. Put roast in oven and immediately decrease temp to 325. Remove when internal temp hits 160. Let rest 15 minutes.

I usually season mine up a bit more. Roll it in herbs, or lemon pepper. Sometimes I'll marinate them for a couple of days! Fat side up in the pan. Leave the roast, seasoned and covered, on the counter for about 40 minutes while the oven heats up, etc. so that the middle of the roast is not so much colder than the rest of it - helps it cook more evenly. And I also take it out when the internal temp is about 145-150. I don't like it dry, and it's going to cook 5-10 more degrees after you take it out...

To each his own, but to me, pork loin doesn't need a whole lot of seasoning. The meat itself just shines, so a simple prep is all it really needs.

At 145 degrees, it's still going to be seriously pink in the center. I don't like it that raw. At 160, juices flow when I carve that puppy. The old recommendation of 170 is too far, yes, but pink pork is not on my preference list. YMMV.

If I have my druthers, I'll brine it for at least 4 hours before I cook it. I'll also butterfly it and stuff it with a reduction of dried cranberries and apples, sugar, vinegar and mustard seed. Then I roll it up, tie it off and roast it to an internal temp of 138, applying the juices from the strained reduction as a glaze after it hits 110.

Buut..in the interests of keeping it simple, Doug's preparation will do nicely.
