I think freezing ground coffee would be worse for this. Even if you freeze and thaw whole bags... condensation will occur.
or, like everyone else said, no need to freeze, go airtight
And I bet you can predict the sale cycles of the coffee Mikey, that stuff tends to be every so many weeks on a calendar...
