I love bell peppers. I love the classic stuffed peppers with ground beef and rice. I love them on pizza, subs, and omelettes. Raw, cut into strips, dipping in Italian Salad Dressing is a favorite for me.

I will cook with the green ones, but if I'm stuffing peppers, I use the red ones. Milder and sweeter and don't overpower the flavor of the stuffing. Never had any luck growing them at home. Phil's had a couple of nice crops of them, but not me.

I substitute riced cauliflower for 'rice' when I make stuffed peppers. You can use ground beef, or really just about anything. Like try diced up steak, seasoned and sauteed very lightly before stuffing in and baking...

Also , red , yellow and orange bell peppers have lots more vitamin C than an orange...

We use a ton of red, orange, and yellow bell peppers. Basically zero green peppers. Some of my favorite ingredients.
