Endive

Probably not to anyone's liking but

I like the stuff, you can even grill it

Grocery had some on sale so I got a couple

at home some leftover chopped onion, some leftover chopped orange bell pepper, some left over italian sausage (already cooked) and some leftover bacom slices (cooked)

remove root end of the endive then split length wise, then slice across the grain

smash and chop some garlic

heat olive oil while a pot of salted water comes to a boil

add onion then pepper and saute, as it softens add the endive... medium high heat here. As it takes in color add the sausage the bacon (both chopped) and the garlic, lower heat as garlic takes on color.

As the pasta cooks take come water and add to the saute pan. deglaze pan, add some hot sauce if desired, grind in pepper. When pasta is 2 minutes short of cooking time remove from pot and add to saute pan, raise heat, add pasta water as needed to keep sauce loose. cooking and toss for 1-2 minutes. Toss in some pecorino romano cheese, toss, add pasta water if needed to retain looseness. Plate. add cheese and ground pepper to taste.

should have a sweet and bitter taste to it.
