My greatest culinary achievement

  1. getting a Lodge cast iron skillet really shiny seasoned
  2. mastering an omelet

FINALLY fixing a pot of ham and beans that my wife didn't bitch about!


Is there anything that I've ever made that just blew my mind? I can't really remember anything. Only my lasagna, and really, there's nothing special there.

And think, it was ten years later before I even knew. It was just kicking back, breaking bread and having the joy of the company of good friends.

What method did you use ???

here is what I have been doing...

If you have the guts to strip cast iron all the way down to metal , I haven't....

but , this method makes for a very hard non-stick (in cast iron terms) coating...

rather than type it all out ...

I have done this on 2 , and it worked fantastic , super nice black color and non-stick....

i even was able to cook eggs...

I dont treat cast iron very well , so , I have to redo the seasoning often...

in all honesty , it isn't me , I cant get the girlfriend not to keep cast iron washing with soap and water... she is slowly coming around...

I done did it by a lot of time, and using a fair amount of olive oil. chops seared in an olive oil/butter combo helps

I am told flaxseed oil is the oil of choice for seasoning iron

I have also heard the soap/water thing isn't the end of the world either

If you get a food, solid coating, it shouldn't hurt to soap off a burnt bit of cheese.

No metal implements, scrape before cleaning, and don't use the thing to steam vegetables.

I've never really gotten a good season.

I really love my porcelain cast iron Dutch oven.
