Bread and Butter Pickles
I really enjoy bread and butter pickles in the summer time. Here is an easy recipe.
Bread and Butter Pickles 2 lbs Pickling Cucumbers 1 Yellow Onion ½ Cup Kosher Salt 2 lbs of Ice 2 ½ Cups Apple Cider Vinegar 2 ½ Cups Granulated Sugar 1 tbsp Whole Mustard Seeds ½ tsps. Whole Celery Seeds ¾ tsps Ground Turmeric Mason Jars or storage bowls Start by cutting your cucumbers and onion into thin slices then place them into a large mixing bowl. Sprinkle on your salt and toss the mix. Add an equal amount of ice cubes to the large mixing bowl, toss once more. Let sit for 3 hours. In a large saucepan add your vinegar, sugar, mustard seeds, celery seeds, and turmeric. Place on the stove and bring to a simmer. Drain and rinse your cucumber onion mix then add to the saucepan. Bring back to a simmer them remove from the stove. Let cool for a few minutes, them place in your jars or storage bowl. They are ready to eat the next day.
