Chili recipes?
Been asked to make a pot this weekend. I'm not really a chili fan, so I don't have a go to recipe for it. If you're willing to share your favorite, I'd love to see it!

Randy’s Raider Nation Tailgate Chili
4# Ground Beef 2# Chorizo 3 Large Spanish or White Onions Diced ½ x ½ 2 Jalapeno Peppers seeded and Diced Small 2 Adobo Chiles and Sauce pureed 1ea Red, Green, Yellow Pepper Diced ½ x ½ pieces 4 15oz cans of Kidney Beans (light or dark) 4 15oz Cans of Medium Chili Beans 5 28oz cans of WHOLE San Marzano Tomatoes 1/2C Chopped Cilantro 1 12oz can of Tomato Paste 5Tsb Granulated Garlic 4Tsb Salt 3 Tsb Coarse Grind Black Pepper 1/3C Chili Powder 4Tsb Cumin 1C Riunite Lambrusco Mix Ground Beef and Chorizo together and brown off in hot skillet. As the meats cook add the Cumin, Chili Powder and coat thoroughly. Drain after fully cooked and set into large stock pot. Combine all the peppers and onions together and sauté’ in the same pan the meat was cooked in(add some oil or butter). Sauté’ until ½ way tender then pour Lambrusco into the veggies. Once the wine/veggie mixture simmer down pour into stock pot with the meats. Open the cans of Tomatoes and pour juice into pot, then HAND CRUSH the Whole Tomatoes into pot. Open the Kidney Beans and drain, place into the pot and add Cilantro. Stir and combine and set on MED HEAT for 2 Hours stirring occasionally. After 2 hrs. add the Salt, Pepper and Garlic along with the can of Tomato Paste(add water as needed). Cook for an additional 2 Hours stirring occasionally. Serve a dollop of sour cream and shredded cheese along with corn bread and cold Riunite Wine. This recipe WON the GREAT LAKES REGION of the Riunite Ultimate Chili Cook off and got me to PHX for the Championship. |

Sounds like a good one. Is the Riunite solid, or can I submit another red wine? I have everything else on the shelf.

I have to make a really simple one for my wife. i cook a roast (or round steak or ground beef) with garlic and salt and black pepper.
White onion cooked with the meat. two cans kidney beans, one pintos. V8 one canned tomatoes, cut or crushed, diced. Chili powder, cumin, more garlic, more salt, put on the counter and CALL THE WIFE AND MAKE HER SEASON IT! Serve with great big bowl full of shredded cheddar and big diced onions. cooking for me, canned green chilis, a chopped dried poblano, bit of tabasco, ancho pepper cooked with the meat. If your family doesn't care, that can be thrown together in about an hour. |

The trick right now is finding reasonably priced beef. Chuck is going for $6/lb. I may buy a brisket and grind it up.

I have a trip tip and I found a brisket for $1.49/lb yesterday. Once I separate the point from the flat, I'll grind the rest for ground beef. I already have 2 briskets in the freezer, so I don't feel guilty. Brisket makes awesome burgers. Plus, I have the trimmings from the last brisket to make the burgers even more tasty.
