I'm still not certain how you can cram all of that crap inside a turkey and still expect it to cook. By the time that center game hen is done the turkey should be charcoaled.

More or less like a turducken. The rice dressing in and between the birds make it into a solid mass that can be roasted. Since all three birds are deboned except for the legs, you can slice it like a roast. I did one once, emphasis on the once. It's far too much work to do yourself.

Fortunately I have a Cajun meat market here that not only debones birds, but makes an astounding rice dressing. Whenever I'm in the neighborhood, I'll stop in and get a couple of stuffed chickens and a half gallon of the dressing.

My son is making Beef Wellington for Christmas. He's getting to be a pro making it.

In the end I just went with a full tenderloin, but I am going to do the beef wellington later this winter for a smaller group.

And Yes, I can see how partaking of part of 4 beef wellington in a week or two period would tire you out on that food.
