Paging BigO - Help with new Smoker
I just got a new Oklahoma Joes smoker/grill and I want to fire it up today. For the occasion I bought my first brisket to BBQ. I am veteran at smoking carolina style BBQ but clueless with Brisket, and I remember that you posted an excellent resource on smoking techniques and sauces some time ago.
I searched for it here on the forum, but I can't seem to find it. Can you point me in the right direction? Also, I normally smoke my pork with dry, split red oak on hardwood burned down to coals. Will this be good for brisket too? Thanks.
