Bread and Butter Pickles
I really enjoy bread and butter pickles in the summer time. Here is an easy recipe.
Bread and Butter Pickles 2 lbs Pickling Cucumbers 1 Yellow Onion ½ Cup Kosher Salt 2 lbs of Ice 2 ½ Cups Apple Cider Vinegar 2 ½ Cups Granulated Sugar 1 tbsp Whole Mustard Seeds ½ tsps. Whole Celery Seeds ¾ tsps Ground Turmeric Mason Jars or storage bowls Start by cutting your cucumbers and onion into thin slices then place them into a large mixing bowl. Sprinkle on your salt and toss the mix. Add an equal amount of ice cubes to the large mixing bowl, toss once more. Let sit for 3 hours. In a large saucepan add your vinegar, sugar, mustard seeds, celery seeds, and turmeric. Place on the stove and bring to a simmer. Drain and rinse your cucumber onion mix then add to the saucepan. Bring back to a simmer them remove from the stove. Let cool for a few minutes, them place in your jars or storage bowl. They are ready to eat the next day. pickles that contain sugar are NOT tasty to me. To each his own.
I would love to make pickles that are as crisp as the packaged ones... that would be a treat. A good friend makes pickled okra that my wife raves over. She made some 'real' (you know, the DILL and garlic and salt kind...) pickles, but put some kind of hot pepper into the jar with them - damn those got hot! John

I love bread & Butter pickles on burgers with cheddar cheese.
Other than that I I prefer a nice dill on the side.

Anyone use a crock to make pickles? I got a 5 gallon crock for christmas and want to try it out. I've only made vinegar based refrigerated pickles in the past.
Also for the first time made sauerkraut. thinking the crock may be used for another batch next. |

I tried Korean Pickles today. This recipe is really good. Definitely has an Asian flavor to it. Check it out.
Korean Style Quick Pickles Ingredients * 4 sliced Kirby cucumbers * 3 tbsp gochujang (Korean red chili paste) * ½ cup rice wine vinegar * 1 clove garlic, minced * 1 chopped green onion * ½ tsp sugar * ½ tsp sesame oil * ¼ tsp salt Add everything but the sliced cucumber to a small mixing bowl, and stir to incorporate. Add in the sliced cucumber, and gently mix to distribute all of the ingredients into the cucumber. Cover and refrigerate over night. The cucumbers will soften slightly the following day. When you are ready to serve, place them as a side dish on the table. Sent from my iPad using Tapatalk

Seems like the Koreans like to pickle just about anything. When I go to a Korean restaurant, I am amazed at how many pickled items are on the menu.

I wish I could find my grandmother's bread and butter pickle recipe. It's one of the few things she cooked that was really good. I have it on a recipe card that is in one of the hundred cookbooks I have.
