King Mackerel
So, my neighbor runs a charter fishing business off the coast of North Carolina. Today he brings over slabs (slabs!) of freshly fileted King Mackerel. Happy Thanksgiving to me! What's a great way to fix KM? Grilled? Fried? Baked? Smoked? Anyone with a killer recipe? Thanks

Be sure to have it blessed first, no matter which method you choose.

IIRC from many years ago near the east coast, people would usually grill or broil it. Some marinated it prior.

What a catch! I'd marinate it and then grill it.

Smoked is great. But marinated and grilled is great, too.
