My wife and I fell in love with this traditional Mexican style of coffee years ago. It is traditionally made in large clay pots, hence the "de Olla". I have tried making it that way before, but it is really a pain in the butt. I have come up with a method of making it with a regular drip coffeemaker that is much easier, and taste remarkably close to the traditional style.

Coarse grind two cinnamon sticks (preferably Mexican cinnamon), and place in the filter basket.
Add your normal amount of coffee, I prefer Killer Beans Medellin Madman.
Before you start the coffeemaker, add one piloncillo to the coffee pot.
Hit the go button!

For those that don't know, piloncillo is a cone shaped hunk of sugar that is primarily brown sugar.

This makes a delicious cup of sweetened coffee. It is not something I would want to drink every day, but it makes a very nice weekend treat. I just put a pot on now!
