I did a batch of Honduran the other day. Very mellow.

First roast batch was a bit flat. Next time I roast it I'll go a bit darker...

With the Guat I like to be just a shade into the second crack. Excellent bean.

Yes they are. Hard to roast, but well worth it. I really like the Mocca Matari.
