So, what is for dinner tonight?

Cajun chicken fricassee and green pea salad. For the salad, dice up a head of iceberg lettuce, add two drained cans of sweet peas and smother it all with buttermilk ranch dressing and bacon crumbles on top.

Pork chops, Brussels sprouts, a cave aged cheddar from local farmers market, an amusingly pretentious Cabernet and cheesecake.

pan roasted chicken thighs with lemon, garlic and herbs de provence... recipe calls for drying the thighs in the fridge so the skin is crispier, I will also add some baking soda to the rub to assist in the crisping.

I'll see your pan-roasted chicken thighs and raise you two garlic-laden porkchops

Sounds good, guys. If you want bite through skin, give it a light coat of mayo. I know it sounds ridiculous, but it works without interfering with the other flavors in your recipe.
