layering it in makes a lot of sense. And kale goes in soups really well (I think you mentioned kale somewhere Brian). Chop it and toss it in. Adds a nice depth of flavor.

There are literally hundreds of varieties and they are native to South America. Like tomatoes.

yes there are. if you look at the grocery now some potatoes are 'yellow flesh' or something like that, others are yukon gold. I assume Yukon will move to some luxury potato status.

Europe is also home to numerous varieties of taters.

It's such a staple foodstuff and produces so much an acre that it's been a successful hybrid all over the world.
