Bacon jam

I forget every year how much work it is to caramelize 30 pounds of onions and 24 pounds of bacon. I need to write on the recipe "this is a three day job. Think twice before you get excited about it"

It is tasty enough to eat it out of the jar with a spoon.

Finally canned it Saturday. Yield was between 3&4 gallons. 3 quarts of bacon fat rendered too.

If I could get the product cost down, it would be a valuable commercial product. Bacon, like Mango, is too expensive an ingredient. If I could team up with a bacon manufacturer and get their ends and pieces at cost, it might work for both of us.

Tried some maple-bacon butter tarts from a bakery in 'lake country' this summer, and was hooked. Bacon'n'sweet is definitely a match made in Heaven.

Maple and bacon are fabulous together. I've heard of a place on the west coast that serves donuts in that flavor and it's now on my bucket list.

I'm already imagining how you could deep fry cake doughnuts with bacon bits in rendered bacon fat, and put a nice maple glaze on them...
