Smoking pace

As a new inductee into the pipe world, what I find myself struggling with the most is pace.

In my mind, I always think of pipes as virtually billowing with clouds of smoke. But whenever I try to smoke them like that, the pipe gets so hot I can't even hold it. And when I try to slow down, I just get little wisps and hardly taste the stuff. I'm not really afraid of relighting, I just want to be able to taste the stuff and still be able to hold the bowl without scalding my hand.

So what's wrong here? The way I'm puffing? Am I not drying the tobacco out enough before packing it and lighting? Any tips?
