Low carb chicken wings
Been making these for a couple of weeks and decided to share. Take a 4 lb. Bag of wing sections and arrange them face up on a baking rack over a foiled half sheet baking pan. Bake at 350 for about 30-45 minutes until wings read above 165 away from the bones.
In a big bowl, combine: 1/3c each Frank's hot sauce and rooster (Sri racha) sauces 1/4c Splenda sweetener 2 T BBQ sauce Whisk together sauce and toss wings in sauce. Serve hot. Of course, you can alter the proportions in the sauce, you can prick the wings with a fork if you want to render more fat out of them, or you can dust them lightly with corn starch (dry them first so it is just for the sauce to stick to without making a heavy breading) for the sauce to stick better. Play with your food and make it the way you like it.

So does baking them make them low carb? Or is that the Splenda?

Carbs and fat are exclusive to each other. The way my doctor explained it, predators in the wild are either starving or fat. They don't worry about fat. I only eat about once a day in the middle of the afternoon. Can't have carbs, so I don't worry about fat. Our bodies process them differently in the absence of one or the other. The things I miss most are sandwiches and pasta, noodles really. I love sandwiches and noodles.
Quite frankly, eating nothing but meat and leafy vegetables sounds great, but it gets boring after about a week. I've been through the whole nuts and chiccarones with dip. I've crutched on good salami. I'm bored with eating, and that's about the last thing I've given up, save tobacco. They will take my cigar from my cold dead hands. The only saving grace of this job is that I have to smoke cigars to keep up. Should be so lucky. Can't take that away without compromising my job.

Question, arnt carbs only from pasta, rice, potato, wheat etc?

Simple carbs come from those sources as well as sugars. On this diet, you are encouraged to eat mostly protein and leafy or cruciform veggies. Whole grains can be added in small amounts after a two-week induction period. The problem is that no matter how much you love meat and veg, there it's easy to get into a rut and the availability of restaurant foods is very limited. I've been putting my chef's hat on and trying to be creative with it.

Paleo diet is just about 'zero' carb, unlike other 'low carb' variants. The difference is 'no processed grain', and, no dairy. The lack of Dairy is killing my wife...
