i don't know if anyone is familar with aged coffees, to be called aged the green beans have to sit in the country of origin for i believe 6 years in storage, picking up all that wonderful dirt, dust, an burlap flavors, back when i was roasting for a company in SF no not starfucks another well known one we started getting what was called aged cofee. no matter how it was roasted to me it was always musty and very earthy, not really a pleasant cup of coffee. what got me to thinking of it was the Cameroon coffee, that was the first Aged coffee we got. anybody ever try any aged coffee and like it? i personally think it was a marketing scheme to get rid of all this old coffee. Most farmers can't let coffee sit and age they need the money, other opinions?
