as I chase paella I have to say the stock is the thing people miss... most recipes call for chicken stock or clam juice.
tonight's paella (a marinera... Fisherman's paella) was the best I have done... wild striped bass (USA Atlantic), Mussels (PEI Canada, farmed) and wild blue shrimp from Mexico made with the shrimp stock from last night.... a lot of nuance in the flavors (wish I had parsley for the paste of garlic-thyme-pimento) makes me think we use chicken stock too often
