I've been asked to do a pot of chili this weekend. Honestly, I'm not a chili fan so I don't have a go to recipe. Would welcome your favorite, if you're willing to share it. Going to start a new thread.

fresh shrimp at under 6 bucks a pound yesterday so I made gambas al ajillo.... shrimp in garlic... it ends up being sort of like NOLA barbecued shrimp with a thick dipping sauce that is very garlicky

last night was a stew of garbanzos and favas.... rendered off the fat from some thick cut bacon, softened garlic onion and yellow pepper.... added pimento... added a smoked pork rib, some bits of various sausages, some ham, and some chorizo corillo (a fresh chorizo with white wine, its an Argentine thing), one can favas, two cans garbanzos and chicken stock and white wine.... simmered for about 2 hours, served over rice.

I like this recipe, efforts to use dried beans have been less successful, I believe it to be a variation on a couple of Asturian soups. Using picante and dulce pimenton allows you to vary the heat. Oh I thickened it by mashing some of the beans and by adding bread crumbs.
