How do you tell if blue cheese has gone off? It's the mold that gives it flavor. More mold means more flavor.

When it loses its 'fresh' aroma and begins to develop an ammonia-like scent, I believe. Visually, it can also start to appear slimy.

Years and years ago, I forgot about a chunk of quality blue in the fridge. When I found it again, it tasted almost like chocolate.

If it's slimy I won't eat it. And I've been known to scrape or cut mold off cheddar and eat it. Slime is off putting.

Honestly, good cheese never lasts long enough around here to usually mold or slime.
I don't think I've found a blue or Gorgonzola that was too strong. One of my favorites is Montrechet, a Spanish blue that's cave aged and wrapped in grape leaves. I absolutely cannot go to Whole Foods anymore. If I do,. I'm going to blow a couple of Benjamin's on cheese alone.

I like the blue as well. I had it on steak (fillet I believe) in a restaurant some time ago. Damn good!

Bag of baby spinach, good amount of blue crumbles, dried cranberries, red onion, tomato, sunflower seeds and whatever dressing you like. Russian, French, raspberry or another vinaigrette of your choice. A few bacon crumbles. Hard boiled egg.
That's a salad. Blue cheese and my bacon jam on a burger with red onion. Heaven.

I think Red Robin had a blue cheese burger that was pretty good. I used to live close to a Red Robin and we frequented it.
