Man that looks good. Almost like a curry dish? Cajun curry without the curry lol. With summer break 2 days away, this looks like the perfect dish for a long beer drinking back porch kinda cook.

I hadn't thought of it like that, but you're right, it does have many of the attributes of a curry dish.

Never tried it that way, but I don't see why it wouldn't work. I'd adjust the cooking time for the pork to keep it from getting tough.
